The small truck was so overwhelmed by the turnout that some customers reported waiting over 30 minutes for their food.

On Tuesday, May 21 nearly 25 employees of UF’s Ayers Medical Plaza gathered in Innovation Square to get a taste of Eim Thai’s authentic Thai food.

The event was part of Food Truck Day, a weekly event organized by local real estate agency Avis Young. Food Truck Day brings food trucks from all over Florida to Innovation Square every Tuesday from 11:00 a.m. to 1:30 p.m.

On the menu was everything from Pad Thai to Panange, a sweet and nutty red Thai curry. The most popular items were the spring rolls which sold out in just an hour.
