Nicole Giaquinto, a 20-year-old UF public relations sophomore, displays a chocolate-covered ice pop at The Hyppo Gourmet Ice Pops on Monday evening. The Hyppo opened its doors for the first time this weekend.

West Gainesville residents will have to wait a little longer to savor gourmet ice pops off Archer Road.

The Hyppo was set to open its second Gainesville location this month in Butler Plaza, but its grand opening was pushed back to mid-November following a comprehensive redesign, said general manager Brent Smith.

Smith said the new shop will look more “rustic and industrial” and will sit between McAlister’s Deli and China King.

“We have a large population of current customers that don’t come that often, and they’ve been begging for us to open one on the west side of Gainesville,” Smith said.

There’s no set date for the grand opening, but Smith said he plans on selling ice pops flavored similarly to those at the downtown store. Some seasonal flavors currently in stock include pumpkin cheesecake and cranberry apple.

Smith said he hopes The Hyppo will open its third Gainesville location by Cheese Daddy on West University Avenue in December.

“A lot of the Gainesville population doesn’t adventure downtown,” Smith said.

“At the moment we’re doing really well downtown, but a lot of people still don’t know about us and still don’t know who we are or where we are,” he said.

Kim Crowell, a UF museum studies graduate student, said her favorite flavor is cookies and cream. The 26-year-old said she thinks the new location will be more popular because there’s more parking in Butler Plaza than downtown.

“Any additional locations would be more than welcomed,” Crowell said.
